Tangy Chickpea Salad

If you have cans of chickpeas in your pantry, you’re 10 minutes away from a delicious, hearty, and tangy salad.

Ingredients:

  • 4 cups Chickpeas (cooked or canned)

  • 1/2 cup White Onion (finely chopped)

  • 1 cup Parsley (finely chopped)

  • 1/4 cup Extra Virgin Olive Oil

  • 1/4 cup Lemon Juice (freshly juiced)

  • 2 tsps Cumin

  • 1/2 tsp Sea Salt (more or less to taste)

  • 1/2 tsp Garlic Powder

  • 1/8 tsp Cayenne Pepper (optional, and to taste)

  • Method:

  • In a large bowl, add in the chickpeas, onion and parsley.

  • Put all the dressing ingredients (olive oil, lemon juice, cumin, salt, garlic powder,cayenne) together in a jar with a lid. Shake to emulsify.

  • Add the dressing to the chickpea salad.

  • Toss, taste, and adjust seasoning to your liking.
