Tangy Chickpea Salad
If you have cans of chickpeas in your pantry, you’re 10 minutes away from a delicious, hearty, and tangy salad.
Ingredients:
4 cups Chickpeas (cooked or canned)
1/2 cup White Onion (finely chopped)
1 cup Parsley (finely chopped)
1/4 cup Extra Virgin Olive Oil
1/4 cup Lemon Juice (freshly juiced)
2 tsps Cumin
1/2 tsp Sea Salt (more or less to taste)
1/2 tsp Garlic Powder
1/8 tsp Cayenne Pepper (optional, and to taste)
Method:
In a large bowl, add in the chickpeas, onion and parsley.
Put all the dressing ingredients (olive oil, lemon juice, cumin, salt, garlic powder,cayenne) together in a jar with a lid. Shake to emulsify.
Add the dressing to the chickpea salad.
Toss, taste, and adjust seasoning to your liking.
